Marking the continued expansion of The Del’s culinary experiences, Nobu Del Coronado is the newest addition to the world-renowned Japanese restaurant empire founded by Nobu Matsuhisa and Robert De Niro.
Nobu Del Coronado offers over 3,700 square feet of stunning indoor and al fresco oceanfront dining space, including an outdoor covered patio dining with a pagoda bar and dedicated sushi bar. Nobu Del Coronado spotlights Nobu-signature dishes including the iconic Black Miso Cod and Yellowtail Jalapeño, as well as Nobu’s world-renowned sushi, plus locally inspired dishes and cocktails.
As a Lead Sushi Cook at Nobu Del Coronado, you will be responsible for the preparation, production, and fabrication of all sushi bar items, including sushi, sashimi, and cold dishes. You will play a crucial role in maintaining the high standards of Nobu’s sushi offerings by ensuring the quality, precision, and presentation of each dish. This position requires advanced knowledge of sushi preparation techniques, attention to detail, and the ability to work efficiently in a fast-paced environment.

Pay: $20.50 per hour plus tips
The Lead Sushi Cook is responsible for overseeing all sushi preparation and presentation, ensuring the highest quality, authenticity, and food safety standards. The role is critical to Hilton as it enhances the dining experience, supports the brand’s commitment to culinary excellence, and drives guest satisfaction in our premium food and beverage offerings.
Position Summary:
- Oversee daily operations of the sushi bar, ensuring all dishes meet Nobu’s quality, presentation, and safety standards.
- Prepare a variety of sushi and sashimi with precision, creativity, and consistency.
- Develop seasonal and specialty sushi menus in collaboration with the Executive Sushi Chef.
- Supervise and train a team of Sushi Cooks, fostering a culture of excellence and teamwork.
- Monitor inventory, order supplies, and manage food costs to meet budget targets.
- Ensure strict adherence to hygiene, health, and food safety regulations.
- Engage with guests to provide an exceptional dining experience and gather feedback for continuous improvement.

Preferred Qualifications
· Education: Associate’s Degree or higher in Culinary Arts, with a focus on Japanese or Asian Cuisine
· Minimum Years of Experience: 7 years of overall culinary experience in a high-volume of fine dining environment
· Minimum Years of Experience: 3-5 years of specialized experience in sushi preparation, including menu development and team leadership
