Commis Tourier / Boulanger
A Commis Tourier / Baker will support the Pastry Chef and kitchen brigade to deliver high-quality bakery and viennoiserie production, ensuring all products meet the luxury standards of Conrad Bora Bora Nui.
What will I be doing?
As a Commis Tourier / Baker, you are an integral part of the pastry and bakery team, contributing daily to the production of breads and viennoiseries for all outlets. You will support the Pastry Chef and senior Chefs by performing the following tasks to the highest standards:
- Ensure consistent production of viennoiseries, breads, and bakery items in line with the hotel's quality standards
- Assist in the preparation, mise en place, and daily production
- Execute basic preparations such as doughs, creams, and batters
- Produce up to 300 viennoiseries per day across a range of varieties
- Apply and master lamination techniques (puff pastry, croissant dough, laminated brioche, etc.)
- Maintain product quality, freshness, and proper storage at all times
- Manage stock levels and minimize food waste
- Ensure full compliance with hygiene and food safety standards (HACCP)
- Maintain a clean, organized, and efficient workstation
- Collaborate with the entire team to ensure smooth and efficient service

- A relevant qualification in pastry, bakery, or equivalent experience
- Good knowledge of basic bakery and viennoiserie techniques
- Strong skills in lamination (puff pastry, croissant dough, laminated brioche, etc.)
- Previous experience in a similar role
- Ability to work independently with good organization and attention to detail
- A genuine passion for the craft, with creativity and precision
- A positive team spirit, flexibility, and adaptability
- A solid understanding of hygiene and food safety standards (HACCP)
