Assistant Chief Steward
The Assistant Chief Steward supports the Chief Steward in leading all stewarding operations to ensure immaculate cleanliness, hygiene, and organization across kitchens and back-of-house areas. The role focuses on team leadership, safety, and operational excellence in line with Waldorf Astoria’s luxury standards and Hilton’s sustainability goals.
Key Responsibilities
Supervise daily stewarding operations including dishwashing, cleaning, waste management, and equipment care.
Maintain hygiene and sanitation standards in full compliance with HACCP and local health regulations.
Oversee inventory of cleaning materials and kitchen operating equipment.
Lead, train, and motivate the stewarding team, ensuring efficiency and high morale.
Support the Culinary and F&B teams to ensure smooth back-of-house coordination.
Implement cost-control measures and reduce breakage.
Promote sustainability and safety practices across all stewarding functions.
Requirements
Minimum 3–5 years’ experience in a similar role within a luxury resort or five-star hotel.
Strong knowledge of HACCP and food safety standards.
Proven leadership and organizational skills with a hands-on approach.
Excellent communication in English.
Computer literacy (MS Office; knowledge of inventory or purchasing systems preferred).
